Summer Citrus Zucchini Noodles with Avocado & Apricot

This might quite literally be what summer tastes like. The fresh zucchini, bright citrus, sweet apricot and creamy avocado flavors blend beautifully to create a summer stunner. It feels like the summer is zooming by so I wanted to stop and appreciate all of the scents and flavors that the peak of summer has to offer.  I love using a spiralizer to turn zucchini into spaghetti! You really still get the feel that you are eating pasta yet you’re eating one of the most nourishing vegetables: so healthy and packed with fiber that’s great for your digestive system.

As you can tell I love avocado in everything so it was a no-brainer here to add some delicious, creamy texture.  Avocados are nutrition powerhouses. Summer Citrus Zucchini Noodles with Avocado & Apricot

Serves 2-3

What you need: a vegetable spiralizer

Ingredients:

-1 large zucchini
-1/2 avocado
-juice of 1/2 lemon
-4 tbsp. fresh parsley, divided
-1 heaping tbsp. extra virgin olive oil
-1 apricot, pitted and chopped into slices
-1/2-3/4 orange, peeled and chopped
-pink himalayan salt and pepper
-1/4 cup raw pumpkin seeds

*Make all ingredients organic if possible

 

Method:

Put the zucchini through the spiralizer and place in a bowl. In a separate bowl, add the avocado, lemon juice, salt, pepper, and olive oil. Mash with  the back of a fork.  Add half of the parsley and mix again.  Chop the apricot and orange.  Add all of the ingredients to the zucchini noodles and gently mix. Add the pumpkin seeds and the rest of the parsley on top.
