Broccoli, Escarole and Spinach soup with Fresh Dill

This green filled soup will leave you feeling so amazing and refreshed before (or after) all of your holiday festivities. This time of year, we are all rushing around with high stress levels to get our final preparations done, and many aren’t making the best food choices. This is the time when the immune system is at its weakest. Getting a major influx of green goodness will help keep your body healthy before the holidays and keep your immune system going strong. This soup is very easy to make and has many common ingredients you likely already have in the fridge and pantry. Freeze some for after your holiday festivities to enjoy and give your immune system a re-boot.

 

Broccoli, Escarole, and Spinach Soup with Fresh Dill

Serving size: 6-8

What you need: blender

 

Ingredients:
-1 large head of broccoli, chopped into bite sized pieces
-2 large handfuls of fresh escarole
-3 large handfuls of fresh spinach leaves
-2 tbsp. extra virgin olive oil
-3 garlic cloves
-1/2 white onion, diced
-1 can of white cannellini beans, drained and lightly rinsed
-4 cups of low sodium chicken stock plus 4 cups water
-1 tsp. of garlic and herb Mrs. Dash (or sub garlic powder)
-dash of red pepper flakes
-1/2 tsp. pink himalayan salt
-1/2 tsp. black pepper
-juice from 1/2 lemon
-2 handfuls of fresh dill, divided
-1 tsp. dried oregano

 

Methods:
Heat the olive oil in a large dutch oven sauce pan over medium-high heat. Mince the garlic into the pot, and add the chopped onion, cooking until translucent, about 4 minutes. Add in the Mrs. Dash or garlic powder, oregano, salt, and pepper, stirring for another minute.  Add in the fresh chopped broccoli and sautee for another 3-4 minutes. Add in the chicken stock and water, then add the escarole, spinach, 1 handful of dill, beans, and lemon juice. Bring to a boil, then let simmer for 20 minutes. Once the broccoli is tender, divide the soup into two batches and puree in blender until smooth. Sprinkle with the rest of the fresh dill, and serve!
