Balanced Power Breakfast

A hardboiled egg, garlicky spinach, avocado and  a Vitamin C rich orange is a balanced and delicious breakfast that will give you long lasting energy to power you through a busy morning.

 I also love making decaffeinated iced coffee (preferably organic, as coffee beans have one of the highest levels of pesticides) with unsweetened almond milk and a dash of cinnamon, which is excellent for blood sugar regulation.  This breakfast with minimal sugar (only sugar from fruit) will keep your energy levels stable all morning and you won’t be reaching for that mid-morning cookie!

Balanced Power Breakfast

Serves 1

Ingredients:
-1/2 avocado, cut into slices
-1 hard boiled egg
-2 loosely packed cups of raw baby spinach
-1 orange, cut into slices
-1 garlic clove

Method:
Boil a small amount of water in a medium saucepan. Once boiling, place the spinach in a strainer above the boiling water and steam until wilted. Remove from heat and grate the garlic clove over the spinach.  Assemble with rest of breakfast ingredients and enjoy!
