Dill and Feta Scramble

Eggs are such a nutrition power house full of vitamin A, protein, and fats.  They are so easy in the morning to scramble with some veggies and herbs to create a flavorful dish that will keep you satisfied throughout the morning, without giving you a blood sugar spike that many grab and go breakfasts such as cereal, muffins, and bars do. This will keep your energy levels balanced along with your blood sugar. So crack open some eggs and keep those yolks! This combination of feta cheese and dill will make your taste buds happy while satisfying your tummy too!  I always love to recommend organic eggs– I love seeing their bright yellow yolks and knowing I’m feeding my body much better nutrition! If you’re going for more of a brunch, enjoy it with an avocado spinach salad as I’ve done here.

 

Dill and Feta Scramble

Serves 1

Ingredients:

-2 eggs, whisked
-2 tbsp. feta cheese
-3 tbsp. chopped fresh dill
-salt and pepper
-extra virgin olive oil for greasing

Method:

Heat up the oil in a pan. Pour in eggs and cook until desired consistency. Add feta and dill on one side of the omelet and fold the other side over the top, creating a half moon. Cook for another 3 minutes, flip, and cook for another 5 minutes. Remove from heat and sprinkle with salt and pepper, and garnish with more dill.
