Peanut-Butter-Drizzled Oatmeal with Blueberries

Oatmeal is one of those healthy comfort foods that definitely keeps you coming back for more once you’re hooked! It can be made and altered in an endless number of ways which always keeps it interesting. Oatmeal is one of those foods that I could eat any time of the day! It works well even with a busy schedule as it only takes about 5 minutes to make on the stovetop.

I used steel cut oatmeal in this recipe which has loads of soluble fiber which is great for your intestinal bacteria to feast on, creating a healthy gut for you. I love adding blueberries to any meal to boost the antioxidant content with minimal sugar.  With simple recipes like this there’s really no excuse not to get a healthy breakfast in to start the day on a positive note!

Peanut-Butter-Drizzled Oatmeal with Blueberries

Serves 1

Ingredients:

-1/4 cup of uncooked steel cut oats
-1 tbsp. of natural peanut or almond butter
-1/4 cup of blueberries
-1 tsp. of raw honey

Method:

Cook steel cut oats according to package directions. I like to use unsweetened almond milk instead of water. Top with blueberries, and drizzle with peanut butter and honey. Enjoy!
