Sweet Potato and Cucumber Mozz Fix

The best thing about sweet potatoes is how great and satisfied they make you feel. I love adding them to breakfast, lunch or dinner to create a balanced plate, but I also enjoy them as snacks because they can really hold you over well until the next meal. This snack is simple to make for that 3 pm slump or easy to pack in your lunch bag for work.

I love hummus or salsa, which can be excellent pairings to many snacks and dishes when they have minimal additives, or better, made at home (give my basil pesto hummus a try!). This simple cucumber mozzarella and lemon salad is light yet delicious and can also be made into a lunch or dinner side dish.  Anything that includes lemon just tastes so refreshing and bright and I know I am doing my body good!

Eating whole, nutritious foods like this for a snack will help reduce your cravings for sweets and processed foods that many tend to reach for during an energy slump. I guarantee your energy levels will be much more balanced when you give up the processed foods for real foods like this!

Sweet Potato and Cucumber Mozz Fix 

Serves 1

Ingredients:

-1 sweet potato
-1 tbsp. hummus of choice
-1 tbsp. garden salsa
-1/2 cucumber, sliced
-1/4 cup of cubed low fat mozzarella cheese
-juice from 1/4 lemon

Method: Preheat the oven to 400 degrees F. Bake the sweet potato wrapped in tin foil for 30 minutes (or microwave for 5 minutes). Toss the cucumber slices with the mozzarella and squeeze lemon on top. Top the warm sweet potato with the hummus and salsa.
